DAY 1: 

BUDDHA BOWL w/ Sesame Ginger Vinaigrette:

marinated cucumbers, local greens, tahini roasted seasonal vegetables, hemp seeds, local greens

TEXAS SPRING SALAD:

local greens, pressed cabbage slaw, cucumbers, squash, coconut flakes, pepitas, turmeric chia dressing

SUMMER SQUASH MOQUECA:

summer squash, onion, sweet potato, coconut, turmeric, ginger


DAY 2: 

PESTO ZUCCHINI NOODLE BOWL:

vegan pesto (nutritional yeast, avocado, basil, pepitas, kale, garlic), local greens, almonds, mushrooms, zucchini noodles 

TAHINI CAESAR SALAD W/ TAHINI DRESSING: 

Mixed greens, tahini roasted cauliflower, kimchi, almond cheese, tahini cashew dressing, pickled cucumbers

CURRIED CARROT BISQUE: 

Carrots, sweet potato, coconut milk, curry powder, turmeric, onion, ginger


DAY 3: 

KETO AVOCADO CABBAGE BOWL w/ Ras El Hanout Dressing

collard greens, hemp-seeded avocado, pressed cabbage slaw, pickled Asian squash, hemp seeds, coconut

PERSIAN SALAD: 

local greens, pressed cabbage slaw, almond cheese, nuts & seeds, sumac cashew dressing

BEET GAZPACHO: 

beets, almonds, sweet potato, ginger, turmeric, cinnamon, nutmeg, clove, cardamom
