BREAKFAST:

Savory Lentil Succotash (GF+Vegan): Sprouted green lentils, beets, carrots, mint, collards, tahini dressing


DAY 1: 

Okinawa Bowl:

yellow cabbage slaw, sweet potato, collards, kimchi, cashews, toasted sesame oil 

Texas Spring Salad w/ Turmeric chia dressing:  

Local greens, red cabbage slaw, cucumbers, squash, coconut flakes, pepitas

Comforting Summer Squash Moqueca

summer squash, onion, sweet potato, coconut, turmeric, ginger


DAY 2: 

Masala Roasted Root Bowl with Lemon Sumac Dressing:  

masala sweet potato, spaghetti squash, local greens, roasted and pressed seasonal vegetables

Green Cabbage Salad with Ras el Hanout Dressing:

local greens, hemp seeds, turmeric roasted cauliflower, saffron cabbage slaw, sprouted sunflower seeds

Lemongrass Carrot Soup:

Carrots, sweet potato, coconut milk, curry powder, turmeric, onion, ginger, lemongrass


DAY 3: 

Warm Avocado Cabbage Bowl:

Purple cabbage slaw, collards, avocado, curried coconut dressing , kimchi, hemp seeds

Miso Mushroom Caesar Salad (Organic Miso Tahini Dressing):

 Local greens, beet kimchi, roasted mushroom cashews, miso tahini caesar dressing

Cream of Cauliflower Soup: cauliflower, nutritional yeast, onion, turmeric, ginger


GOOD FOR YOU TREATS: (sweetened with dates)
