Persian Salad w/ Sumac Cashew Dressing

Local greens, saffron turmeric cabbage, cardamom carrot slaw, roasted mushrooms, sumac cashew dressing

Comforting Summer Squash Moqueca

DAY 2: 

Thai Curry Bowl   

Sweet potato, zucchini, Thai curry, mustard seeds, onion, coconut milk, turmeric, ginger, kaffir lime leaves, lemon grass, local greens 

Tahini Caesar Salad 

Local greens, kimchi, pickled zucchini, tahini cashew dressing, squash escabeche, pickled cucumbers 

Curried Cauliflower Soup

Cauliflower, yellow squash, curry powder, zatar, onion, garlic, ginger, turmeric


DAY 3: 

Vegan Poke Bowl 

Marinated cucumbers, local greens, cauliflower rice, kimchi, sesame ginger vinaigrette

Energizing Beet salad w/ green goddess dressing

Local greens, kimchi, zucchini, marinated beets, pepita seeds, hemp seeds

Thai Carrot Soup 

Carrot, sweet potato, lemon grass, kaffir lime leaves, ginger, onion, turmeric
